A Homemade Granola Recipe gets you off to a great start in the morning with a healthy breakfast. Granola is also a great snack to keep you fueled throughout the day.
Make delicious and beautiful granola.
• 2 cups old fashioned oats (not instant)
• 1 cup pecans
• ¾ cup coconut
• 5 T. olive oil or melted butter (or a combination of both)
• 5 T. honey or maple syrup (or a combination of both)
• 1 t. vanilla
• 1 t. cinnamon
• pinch of salt
• 1 cup golden raisins
Preheat oven to 350° Fahrenheit.
In a large bowl, mix together oats, pecans, and coconut.
In a medium bowl, stir together oil, honey, vanilla, salt, and cinnamon. Add to the oat mixture and mix well.
Spread out on a baking sheet with edges. Bake until golden brown for 30-45 minutes, stirring with two forks every 10 or 15 minutes.
Add raisins and mix gently. Let cool. Soon afterward, store in airtight container or freeze.
Our favorite way to eat granola is inspired by our friends in Europe.
• Mix a squirt of honey into plain greek yogurt. Add enough granola to be coated by the yogurt.
Even no-fat greek yogurt will still be thick and satisfying. Greek yogurt has much of the bitter liquid drained out of the yogurt, making it much more like sour cream.
• Eat like any other cereal - with milk (preferably skim).
If you don't like skim milk, try 1% milk. It has just enough fat left in to taste different. It's a bit thicker and works great for people that just can't drink no-fat milk yet.
• Eat granola plain for a snack.
When you make your own granola, you can be confident that you're eating a high fiber, healthy breakfast or snack.
