Imagine a Healthy Chocolate Cake Recipe that you like as well, if not better, than your favorite chocolate cake. Here it is!
My daughter has always loved cake, and she loves to bake cakes. When we were testing these healthy cake recipes, she loved every single one of them. That's high praise for cakes made with whole grain flours - not an easy task!
I got smart this time and researched healthy baking cookbooks. I decided on the King Arthur Flour Whole Grain Baking book. I love it! I think if our house was one fire, this is what I would grab on my way out. (Well, after my purse)
This recipe is based off their Chocolate Pound Cake recipe. It had more of the texture and weight of a regular chocolate cake than a pound cake.
• 2 cups sugar
• 1 cup butter, room temperature
• 1 3/4 cups whole wheat pastry flour
• 1 cup cocoa powder
• 3/4 cup flour
• 1/2 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1 teaspoon salt
• 5 eggs, room temperature
• 1 teaspoon vanilla
• 1 Tablespoon instant coffee crystals (or one individual packet)
• 1/4 cup hot water
• 3/4 cup buttermilk
• 1/3 cup butter, melted
• 2 cups powdered sugar
• 1 teaspoon vanilla
• 2-4 Tablespoons milk
Preheat oven to 350° F. Spray bundt pan or 13x9 pyrex dish with cooking spray.
Add sugar and butter to mixing bowl. Beat for five minutes.
Meanwhile, whisk together all dry ingredients in a medium bowl, preferable with a spout. Set aside. Dissolve coffee crystal in 1/4 cup hot water; set aside.
Add one egg at a time to the sugar and butter mixture. Beat for 4-5 minutes. Add vanilla.
Alternate mixing in dry ingredients and wet ingredients (coffee and buttermilk). Don't over mix. If possible, let batter sit for an hour to soften the whole grains. Pour into baking dish.
Bake for 55-65 minutes or until a toothpick comes out clean.
Melt butter in a saucepan over medium heat. Stir in powdered sugar and vanilla. Add milk one tablespoon at a time to see how much it needs. Drizzle over cake.
Whole Grain flours contain fiber, which provides many, many benefits. Fiber reduces cholesterol, keeps you full and lowers the amount of food you eat, prevents cancer, prevents stroke, prevents diabetes, helps asthma, and promotes healthier teeth. Whole grains provide vitamins and nutrients: several B vitamins, iron, magnesium and selenium. These are vital to your body for metabolism, building bones, using energy, building immunity, transporting oxygen, and making red blood cells.
Cocoa is rich in flavonoids which are antioxidants. They lower cholesterol and blood pressure, prevent diabetes, and increase health of blood vessels. They also help in our body’s management of insulin, which is important in weight loss and appetite control.
Buttermilk contains protein, calcium, potassium, and almost every vitamin. Just the calcium increases bone and teeth health, prevents some cancers, and helps blood pressure and heart health. Potassium lowers blood pressure, prevents osteoporosis and renal disease, and prevents diabetes.
Eggs are a health powerhouse. They are full of protein and vitamins. An egg's nutrition assists our body functions from immune system, metabolism, reproduction, nervous system, blood health, etc., etc., etc.
Salt is essential to our health. It aids our nervous system and regulates water in our bodies.
Butter is a natural food that contains protein and vitamins B-12, A, E, D, and K. These vitamins do everything from aiding immunity, vision, metabolism, nervous system, bone health, and much more.
Sugar isn't all bad. It's a carbohydrate which is our body's main source of energy and pretty much our brain's only source of energy. Keep your intake of sugar moderate and you can enjoy desserts without gaining weight.

You can't just substitute whole wheat flour in baking and have it turn out. Have you had as many failures as I have?
I had no idea you could make cakes with whole grains and have them taste as good as regular cakes!
