Yes, eat Brownies!

A great healthy brownie recipe allows you to live a fit, healthy lifestyle and still enjoy dessert. Add some nutrition to your favorite brownies.

Walnuts are extremely healthy with benefits for our heart, brain and overall health. They contain the highly sought after omega-3 fatty acids. They are loaded with antioxidants - higher than blueberries or strawberries. They also contain fiber, protein, and minerals.

Zucchini is a vegetable - what a great way to eat a little veggie without even knowing it! Zucchinis also contain omega-3 fatty acids, potassium, vitamins A & C. They are very low in calories. They disappear in most chocolate recipes, and they're easy to find in most grocery stores year round.

Chocolate is rich in antioxidants and contains some healthy fats.

Nutty Topped Brownies

• 1 brownie mix
• (water, oil, eggs - according to package instructions)
• 1 cup shredded zucchini
• 3/4 cup walnuts*


Preheat oven to 350° F.

Spray 13x9 pyrex dish with oil. If you want to cut the brownies cleanly outside the pan, line it with parchment paper and spray with cooking spray again.

Stir brownie mix, water, oil, and eggs according to package instructions. Add shredded zucchini.

Pour into greased pyrex dish. Sprinkle walnuts on top.

Bake according to instructions, about 30 minutes. Cool and cut.

*Use different nuts, like pecans or almonds if desired.


Not everyone is "nuts" about nuts

Sprinkle the nuts on top.

I love nuts, but some people just can't stand them. With the walnuts sprinkled on the top of the brownies, they can easily be removed.

Being on the top also allows the walnuts to toast in the oven and makes a beautiful pan of brownies.

Let's take our brownies up a notch

We still want dessert. Brownies are easy to make and universally loved. Make a pan of brownies, and you become a teenager's instant friend.

They should still taste like moist, chocolatey, dense brownies with a thin, papery crust on top. If you take out all the fat from your recipe, you'll miss those things.

Let's make our brownies healthier by adding some nutritious food to it - like the walnuts and zucchini. They are no longer empty calories. Still dessert and but still allowed in our healthy lifestyle.
