Pork Tenderloin

Pork tenderloin is very lean and fool proof to make. It even reheats well; pretty amazing. Recently, I've fallen in love with making pork tenderloin. I just can't mess it up!

This recipe is very simple. An easy coating and simple saute. I give you tips on how to make the meat in batches. Easy dinner ideas!

How to reheat:
1) Place in 350° oven for 10 minutes.

Smashed Potatoes

Can be made ahead? YES!

This mashed potato dish has really become popular at my house! My kids would rather have this version with winter squash than traditional white mashed potatoes for easter dinner recipes.

The squash makes this recipe really healthy and keeping the potato skins on makes it even healthier.

How to reheat:
1) Microwave.
2) Place in a casserole dish, cover with foil, and bake at 350° until warmed through, 20-30 minutes.
3) Place in a crock pot on low power at least an hour before dinner. Stir before serving to get rid of hot spots.

Can be made ahead? Partly - cut the lettuce a day ahead and store in a ziploc bag.

Why did I choose this salad? It's the only salad that gets emptied at our family dinners.

This salad can be made in stages:
1) Cut lettuce the day before.
2) Mix up dressing 30-60 minutes before dinner.
3) Right before you eat, toss the salad.

Can be made ahead? YES! And you should because they will taste even better the next day.

These traditional "deviled eggs" are renamed for easter. Keep your eggs refrigerated until dinner time.

My mom always makes these eggs for family gatherings. She makes them even nicer by piping the egg yolk mixture with a star tip.

Buy the Bread

Can be made ahead? Yes, buy it the day before.

This definitely falls into the category of quick dinner recipes.

I give you permission to make things easier for easter dinner recipes and buy sourdough bread from your favorite bakery. My grocery store bakery makes the best sourdough bread I've tasted.

So far, I'm still looking for an easy recipe for sourdough bread. Haven't found it yet. If you have one, send it to me!

Sourdough is healthy because its acid content makes it slower to digest (that's what you want). Whole grain and whole wheat breads are also healthier choices.

Easter Story

On Easter, we celebrate and remember Jesus Christ being raised from the dead - 3 days after dying on a cross.

Why is this important and why do people still remember?

Because Jesus was the Son of God and never sinned, his death paid the price for all of us to get into heaven when we die. No sin can be allowed in heaven - which leaves us out - until we believe and accept Christ's payment for us.
