Easter Cake Cut-outs

To Decorate:

1. Use large Easter cookie cutters to cut out shapes from your cake.

2. Sprinkle with powdered sugar or cover with Chocolate Glaze or Vanilla Glaze.

3. Decorate with candy. Enjoy your easter dessert recipes!

Chocolate Cake
• 1 3/4 cups sugar
• 2 1/4 cups cake flour
• 2 T. cornstarch
• 3/4 cup cocoa
• 1 t. baking powder
• 1 t. baking soda
• 1 t. salt

• 3/4 cup buttermilk, warmed
• 1/2 cup canola oil
• 2 t. vanilla
• 1 cup hot water
• 2 eggs, room temperature

Easter Sunrise Yellow Cake
• 1 3/4 cups sugar
• 3 cups cake flour
• 2 T. cornstarch
• 1 t. baking powder
• 1 t. baking soda
• 1 t. salt

• 3/4 cup buttermilk, warmed
• 1/2 cup canola oil
• 2 t. vanilla
• 1 cup hot water
• 2 eggs, room temperature

(Same instructions for both cakes) Preheat oven to 350° F. Line a large baking sheet with parchment paper (Set piece of parchment paper in cookie sheet; crease at edges, cut off excess leaving paper covering the sides). Spray paper with cooking oil.

In a mixer bowl, add all dry ingredients. Mix together on low (or whisk by hand).

In a large liquid measuring container, pour in buttermilk and microwave for 15 seconds to warm it. Measure in oil, vanilla and hot water.

Start mixer on low and slowly pour in liquids. Add eggs. Mix for 2 minutes on medium low speed. The batter will be very thin, like a cake mix.

Pour into cookie sheet. Bake for 15 minutes, until toothpick inserted into cake come out clean or with moist crumbs.

Cool for 5 minutes. Grip the parchment paper, and slide the cake out onto your counter.  Cool.

Vanilla Glaze
1/3 cup butter, melted
2 cups powdered sugar, sifted
1 T. vanilla
2-4 T. milk

In a medium bowl, melt butter in microwave. Add powdered sugar and milk. Stir.

Chocolate Glaze
1/2 cup chocolate chips
2 T. butter
2 T. corn syrup
1-2 t. hot water

In a medium bowl, melt all ingredients. Stir.

• 1 3/4 cups sugar
• 2 1/4 cups cake flour
• 2 T. cornstarch
• 3/4 cup cocoa
• 1 t. baking powder
• 1 t. baking soda
• 1 t. salt

• 3/4 cup buttermilk, warmed
• 1/2 cup canola oil
• 2 t. vanilla
• 1 cup hot water
• 2 eggs, room temperature

Preheat oven to 350° F. Take top shelf out of oven. Spray a bundt pan with cooking oil.

In a mixer bowl, add all dry ingredients. Mix together on low (or whisk by hand).

In a large liquid measuring container, pour in buttermilk and microwave for 15 seconds to warm it. Measure in oil, vanilla and hot water.

Start mixer on low and slowly pour in liquids. Add eggs. Mix for 2 minutes on medium low speed. The batter will be very thin, like a cake mix.

Pour into bundt pan. Bake for 40 minutes, until toothpick inserted into cake come out clean or with moist crumbs.

Cool for 10 minutes. Turn out onto cooling rack.  Cool.

To serve: sprinkle with powdered sugar and add some Easter candy to the plates. Everyone will love your easter dessert recipes.


Brown Sugar Carrot Cake Trifle

Brown Sugar Carrot Cake Trifle

• 1/3 cup canola oil
• 3 egg whites, room temperature
• 1/2 cup applesauce (no sugar added)
• 1 cup brown sugar
• 1 1/2 t. baking powder
• 1 t. baking soda
• 1 t. cinnamon
• 1 t. vanilla
• 1/4 t. salt

• 1 cup white all-purpose flour
• 1 cup white whole wheat flour
• 2 cups shredded carrots*

Candied Nuts:
• 2 cups nuts
• 4 T. butter
• 4 T. brown sugar
• 1 T. maple syrup
• Salt

Trifle:
• Cinnamon and sugar
• Cool Whip (or whipped cream)
• Candied Nuts

Preheat oven to 350° F. Grease bottom of 9x13 pyrex dish or deep dish pizza pan.

In mixing bowl, combine oil, egg whites, applesauce, brown sugar, baking powder, baking soda, cinnamon, vanilla, and salt.

Add flours, mixing just until moistened. Add carrots.

Pour into baking dish. Bake for 30 minutes until done. Cool.

Make Candied Nuts:
In a saucepan over medium heat, melt butter. Stir in nuts, brown sugar, and maple syrup. Cook for about 5 minutes, stirring when needed.

Spread on parchment paper; immediately sprinkle with salt. Cool.

To Assemble:
Layer with pieces of cake and cool whip (or whipped cream). Sprinkle the top with cinnamon and sugar. Add a few candied nuts.

*Carrot Tips:
Worst - Buying preshredded carrots from the grocery; they're coarse and dry. They don't blend into the cake.

Good - Shredding the carrots by hand. It takes some time and elbow grease, but that's ok. Hey, it's a little bit of exercise!

Good - A carrot cake mix. It's fast and tastes good, but beware -  there may be no carrots in it. My mix had fake carrot-flavored bits made out of flour.

Best - Using food processor to shred the carrots. It's worth hauling the machine out and cleaning it afterwards. So fast (and fun) for easter dessert recipes!
