Chicken Tetrazzini Recipe

Treat yourself and your loved ones to this chicken tetrazzini recipe. Learn how to serve comfort food and still maintain a healthy weight.

The secret is learning correct portions and adding great side dishes.

Chicken Tetrazzini

• 3 chicken breasts, cooked and diced
• 1/2 pound whole wheat spaghetti
• 1/2 cup butter (1 stick)
• 1 cup sour cream
• 1 can cream of chicken soup (low fat version)
• Parmesan cheese

Preheat oven to 350° F.

Cook spaghetti in large pot with a lot of salted water. (If you don't have a taste for whole wheat spaghetti yet, use 1/4 pound white spaghetti and 1/4 pound whole wheat spaghetti.)

Meanwhile, in a large bowl, melt butter. Add sour cream and cream of chicken soup. Stir well. Add chicken and stir gently until combined.

When spaghetti is al dente (still a bit chewy on the inside), drain and place in a greased 9x13 casserole dish.

Add half the chicken mixture. Gently stir to coat the spaghetti. Add the rest of the chicken mixture and spread evenly on top.

Generously sprinkle parmesan cheese all over the top.

Bake for 30 minutes or until top is golden brown. *If the top is taking too long to brown, turn broiler on high for just a few minutes until the chicken tetrazzini is golden brown. Watch closely so it doesn't burn.

Let the tetrazzini cool for 5 minutes then serve.

Variations on Chicken Tetrazzini

Turkey Tetrazzini

Replace chicken with turkey.

This recipe is a hit after Thanksgiving. Right before the holiday, I stock up on sour cream, cream of chicken soup, spaghetti, and disposable aluminum casserole pans.

After the big feast, I can make two batches - one to eat and one to freeze.

Butternut Squash and Chicken Tetrazzini

Add 3/4 cup mashed butternut squash to the chicken mixture. (Acorn squash is very similar.)

Simply cut the squash in half lengthwise. Scoop out seeds. Place cut side down in a dish and microwave for about 5 minutes or until tender. Scoop out squash and mix in with the chicken.
