Chicken Quesadilla Recipe

A Chicken Quesadilla Recipe spices up any lunch or dinner.

It's easy to incorporate healthy ingredients, and kids love it as much as adults. Whole wheat tortilla shells aren't the favorite at our house (I admit), but I don't get complaints when they're used as quesadillas. And chicken is more popular in a quesadilla than in a regular taco.

Customize each quesadilla for each person at your table, and you'll be a hit. You can make everyone happy by putting in the ingredients they like, and you'll still feel good that each quesadilla is a healthy meal.

Chicken Quesadilla Recipe

• whole wheat soft tortillas
• shredded chicken
• shredded cheese
• 1 can small white beans, optional
• salsa
• lettuce, bite-size pieces
• optional ingredients: onion, peppers, chilis, green onions, olives, mushrooms, refried beans, tomatoes, zucchini, summer squash
• optional condiments: salsa, avocado slices, guacamole, ranch dip, taco sauce, spinach

Heat a quesadilla maker.*

Assemble your quesadilla. Lay one tortilla on the counter. Sprinkle on chicken, beans, cheese and salsa. Avoid piling ingredients in the exact center of your tortilla because each cut will intersect the center.

Heat quesadilla until it starts to brown, 4-5 minutes.

Remove quesadilla with a heat-proof spatula and lay on a cutting board. Cut into 6 pie-shaped pieces (3 cuts).

Serve with salsa and lettuce. (If your family is picky about chunky salsa, puree it in a food processor.)

*If you don't have a quesadilla maker, use a large skillet. Heat quesadilla until golden brown, then flip over and heat other side.

Tips for Great Quesadillas

The Greatest "Leftover" Meal:

Last night's chicken becomes today's quesadilla. Whether you roasted, grilled or baked chicken, they work well shredded up for a quesadilla. Another good option is picking up a rotisserie chicken from the grocery.

Our favorite types of cheese to use are monterey jack and cheddar. Goat cheese is a tangy option, especially for adults.

Make sure vegetables are diced very small. Don't pile on too many ingredients, unless you like them spilling out on your pan or quesadilla maker (some people love that).
