healthier version with this recipe.

• 3-4 chicken breasts, sliced into thin strips
• zest and juice from 1 lime
• 1 t. chili powder
• 1 t. salt
• 1/4 t. cumin
• 1/2 t. pepper
• 2 T. olive oil
• 1 garlic clove, pressed
• 1 onion, sliced into thin strips
• 1 green bell pepper, sliced into thin strips
• 1 orange bell pepper, sliced into thin strips
• 1 red bell pepper, sliced into thin strips
• salt and pepper, to taste
• salsa, optional
Preheat a heavy skillet on low.
Slice chicken and drain on several layers of paper towel.
Zest and juice one lime. Add spices, olive oil and garlic. In a large ziploc bag, place chicken and marinade. Work the marinade around until the chicken is thoroughly covered. Store in refrigerator, up to one day.
Slice vegetables. Make thin strips for this recipe because the vegetables will fit better in the center of a tortilla (and makes them easier to eat).
Wrap your stack of tortillas in aluminum foil. Put in 350°F oven.
Turn the heat up on your skillet to medium high.
Pour in 2 T. grape seed oil. Add half the chicken. Cook until done, about 5 minutes. Remove to a clean bowl.
Add the rest of the chicken, cook, remove to bowl. Keep the remaining marinade in the ziploc bag.
Add onion. Salt and pepper them to taste. Cook until translucent, about 3-4 minutes. Pour the rest of the marinade into the skillet. Make sure to bring the liquid to a boil (to kill any germs).
Add peppers. Sprinkle with salt and pepper then stir thoroughly. Cook until peppers start to brown, about 3-5 minutes. Let excess liquid cook away. If your skillet is too dry, add a couple tablespoons of water.
Add chicken back to pan. Heat through, about 2 minutes.
Take tortillas out of oven. Take all food to table. Fill tortillas with chicken and peppers. Add salsa if you wish.
