Best Chicken Noodle Soup Recipe

• 3-4 T. olive oil
• few red pepper flakes

• 1 medium onion, chopped
• 1 garlic clove, chopped
• 1 cup carrots, chopped
• 1 celery stalk, chopped

• Salt & pepper
• 1/4 cup flour
• 1/2 t. chicken bouillon granules (or 1 cube)

• 6-7 cups chicken broth
• 3 cups whole wheat noodles, uncooked
• 2 cups cooked chicken, shredded

Place a stock pot on medium heat. Add olive oil and a few red pepper flakes. Swirl around and let the red pepper flakes infuse the oil with flavor for a minute. Stir in onion; saute for approximately 5 minutes. Add carrots, celery and garlic; stir and saute for 2 minutes.

Now it's time to make the soup creamy: sprinkle salt and pepper over the vegetables then add flour and chicken bouillon flavoring. Stir and cook for a couple minutes. Whisk in part of the chicken broth then stir in rest of the broth. *What you've done can be the start for ANY soup.

Bring to a boil and add noodles. Set timer for 8 minutes; stir occasionally. Last, add chicken. Let it heat through for a few minutes. Serve immediately or let simmer for awhile until meal time.

Tips for Making the Best Chicken Soup

I really love the taste of this chicken noodle soup. Here are some reasons why:

By letting just a few red pepper flakes sit in the oil at the beginning, you give the soup depth of flavor right off the bat.

When I eat chicken noodle soup, I like for the carrots and celery to still have a little crunch and bright color; that's why we don't saute them very long. On the other hand, I don't want crunchy onions in this soup, so we add them first and cook them longer to soften and sweeten them.

I like a beautiful golden brown color for chicken soup, so increasing the carrots helps.

Although having a "clear" broth is very popular for chicken soup, I just feel like something is missing. That's why we add flour to the vegetables. It thickens the soup and gives more flavor (and doesn't add lumps). Also, a little chicken bouillon gives it just the right taste.

Finally, whole wheat noodles boosts the healthiness of the soup and adds fiber.
